This morning I was craving berry jam on toast but I tried to put it off because I know how much sugar jam it's stuffed with, hence why it tastes so good! I have always loved jam especially with peanut butter, what a great combo! I was watching Curtis Stone make a summer jam recipe, it looked amazing but he put in a cup of sugar, which got me thinking.. What else could I use? Maple Syrup.. The answer to many of my problems!
It works perfectly in the recipe!
-1 cup mixed berries
-1/4 cup lemon juice
-3 tbsp maple syrup
Put all the ingredients into a saucepan then simmer on low and let it bubble away, whilst slightly mashing the berries, so they blend together! It will start to thicken and look sticky, leave on low for a total of 10-15min, then allow to cool.
I love reusing old jars, I keep them for everything, this is a perfect time to use one of the coolest shaped jars and fill with delicious guilt free mixed berry jam! They would make lovely gifts for Birthdays or Christmas, with a nice ribbon around it and a personalised label!
